Skillet Sweet Potato Bake

– sweet potatoes  – butter – garlic – olive oil – kosher salt – black pepper – rosemary

Preheat your oven to 350°. Next, using a mandolin, slice the sweet potatoes.


Place melted butter, olive oil, rosemary, salt and pepper in a bowl. Then, whisk until incorporated.

Place the slices of sweet potatoes into a ring in your oven-safe skillet or dish. If you have leftover sweet potato slices, you can create a smaller ring to fill the skillet.

Pour the dressing over the sweet potatoes, and bake covered for 30 minutes until the sweet potatoes are tender.
