If you enjoy summer fresh peaches and tomatoes, you are going to love this Peach Caprese! It’s a spin on the traditional caprese recipe, with the addition of Prima® peaches!
– Prima® peaches – A ripe and ready-to-eat peach will feel slightly soft to the touch. – Heirloom or similar style tomato – you want a beefier style tomato. – extra-virgin olive oil – white balsamic vinegar – basil leaves – you can leave whole or you can julienne. – mozzarella – you can buy pre-sliced or a log of mozzarella and cut the slices yourself. – kosher salt – freshly cracked black pepper
Step 1 Prep: Slice the tomatoes and mozzarella to about the same thickness. Slice the peaches.
Step 2 Plate: On a platter, arrange mozzarella, tomatoes, basil leaves and sliced peaches.
Step 3 Season: Drizzle with olive oil and white balsamic vinegar. Season with salt and pepper and top with fresh basil.
