Ingredients Needed for Fresh Blueberry Galette Recipe

- Pie Crust - Flour - North Bay Blueberries - Turbinado Sugar - Lemon juice - Ground Cinnamon - Egg - Water

Step 1: Remove your pie crust dough from the fridge and let it sit at room temperature for about 15 minutes to prevent cracking during baking. Prepare your baking sheet. Step 2: Lay a piece of wax paper on the counter and lightly sprinkle flour over the top. Then place the pie crust on top of the floured wax paper, sprinkle more flour on top of the dough, and lay another piece of wax paper over your dough. Step 3: Use a rolling pin to roll the dough into an eleven-inch circle

Step 4: Remove the wax paper from the top and brush off the excess flour. Then, use both hands to flip the pie crust so the dough side is touching your hands and the wax paper is on top. Gently lay the pie dough on your prepared baking sheet. Cover with plastic wrap and refrigerate for 15-30 minutes.

Step 5: In a medium mixing bowl, add the North Bay Produce blueberries, sugar, lemon juice, flour, and cinnamon. Use your hands to toss the ingredients until the blueberries are coated with the rest of the filling ingredients.

Step 6: Grab your pie crust from the fridge, remove the wax paper, and spoon the blueberry filling mixture into the middle of your pie dough. Use the back of a spoon to spread the filling, leaving two inches on the edges.

Step 7: Fold an edge over the blueberry filling so you have a short, straight edge. Repeat in small sections so that each section overlaps the previous fold.

Step 8: Mix the egg with one tablespoon of water and use a pastry brush to spread across the crust. Sprinkle the entire galette (crust and blueberries) with sugar. Step 9: Bake for 30-40 minutes until the filling is bubbling and the crust is golden. Serve warm with a scoop of vanilla bean ice cream.
