Lunch doesn’t need to be complicated to be filling, and it shouldn’t make you feel like you’re in a food coma.

Ingredients

apples

Gouda cheese

baby arugula

olive oil

golden raisins

walnuts

How to Make this Apple, Gouda, and Farro Salad With Arugula:

Warm a pan over medium heat, then add your walnuts to the pan. Toast for 5 minutes.

Place baby arugula in a large bowl. Top the arugula with apples, Gouda cheese, faro, raisins, and toasted walnuts.

Whisk together the olive oil, apple cider, vinegar, honey, mustard, and garlic powder in a small mixing bowl. Season with salt and pepper to taste.

Drizzle your salad with the vinaigrette. Use tongs to gently coat your salad with the dressing. Serve!
