First, simmer the fruit. Place your raspberries and water in a small saucepan. Cook over medium heat, using a wooden spoon to mash the berries as they soften to release all those gorgeous juices.
Next, sweeten the pot. Add the honey and stir until it is completely dissolved into the raspberry water.
Reduce the heat to low and let the mixture simmer for 15 minutes. Stir occasionally to ensure nothing sticks to the bottom.
Next, steep the flavor. Remove the pan from the heat and let it sit for 45 minutes. This “steeping” phase is the secret to a deep, complex berry flavor.
