Calling all peach lovers! This peach coffee cake recipe is perfect as a dessert or to enjoy along side of a cup of coffee in the morning.

Ingredients
Cake
½cupunsalted butterroom temperature
¾cupwhite sugar
2eggs
2tspvanilla extract
½cupmilk
½cupfull fat sour cream
2cupsall purpose flour
2tspbaking powder
½tspsaltomit if using salted butter
5Peachespitted & thinly sliced (yields about 3 cups)
1tspcinnamon
1Tbsplight brown sugar
Streusel Topping
1 ¼cupall purpose flour
¾cuplight brown sugar
¼tspsaltomit if using salted butter
6Tbspunsalted buttermelted & cool
Instructions
Preheat oven to 350° F.
Wash 5 peaches and slice thinly. Sprinkle with 1 tsp cinnamon. Set aside.
Using a mixer, beat together ½ cup room temperature butter and ¾ cup white sugar until fluffy.
Add the 2 eggs and 2 tsp vanilla. Beat on medium speed for 2-4 minutes until well incorporated.
Add ½ cup milk and ½ cup sour cream - mix together on low speed until combined, approximately 1 minute.
In a separate bowl, whisk together dry ingredients: 2 cups flour, 2 tsp baking powder, ½ tsp salt.
Pour the flour mixture into the wet ingredient mixture. Be using a rubber spatula and folding the batter until well combined. Batter will be thick.
Grease a 9x13 cake pan with butter or non-stick spray. Pour the batter into the pan, use the rubber spatula to evenly distribute batter in the pan.
Layer the sliced peaches over the top of the batter.
Prepare the Streusel by stirring together 1 ¼ cup flour and ¾ brown sugar. Pour in the melted & cooled butter and mix together with a fork until the mixture is crumbly.
Sprinkled the streusel mixture over the layer of peaches, evenly distributing it to cover the entire pan - all the way to the corners.
Bake at 350F for 45-50 minutes. When finished, a toothpick inserted into the center of the cake will come out clean.
Cake will slice best at room temperature. Let cool for approximately 30 minutes, or eat warm if you don’t care about picture-perfect slices.
