Ingredients
3lbsrusset potatoesabout 5 medium to large russet potatoes, peeled and cut in half
2tbspwhite wine vinegar
1 1/2cupsmayonnaise
2tbspyellow mustard
1/4cupsweet relish
1/2medium sweet onionfinely diced
2cupsDandy® celery large chops
2tspsea saltmore to taste
1tspblack peppermore to taste
Instructions
Prep Potatoes: Peel the potatoes, and cut them in half. Cover with 1-inch of water, and on medium-high heat, boil for 25 minutes or until fork tender. Drain the potatoes. Let them sit until cool.
Prep Veggies: While the potatoes are cooking, finely dice the sweet onion and chop the celery. Put them in a large bowl.
In a medium-sized bowl, whisk together dressing ingredients (mayo, vinegar, mustard, relish, salt and pepper).
Let the potatoes cool. Then, cut the potatoes into 1/2 to 1-inch pieces.
Finally, add potatoes in the large bow with the diced onion and chopped celery. Gently toss with dressing.
