750 ml100-proof vodka
3cupswater

Instructions
Peel the outermost layer of each lemon with a peeler and add to a large mason jar.
Pour the vodka into the jar until the lemon peels are completely covered. Seal the jar with a lid and place the mixture in a cool, dark place.
Swirl the alcohol around every other day for 15 seconds for 2 weeks or up to 30 days (depending on your vodka's strength and desired intensity of lemon flavor).
Strain the limoncello through a coffee-lined strainer, over a large bowl. Discard the peels and set the lemon-infused vodka aside.
Add the water and sugar to a saucepan over medium-high heat, stirring utnil the sugar is dissolved (about 3-5 minutes.)
When the simple syrup has completely cooled, add it to the rinsed mason jar with the lemon-infused vodka and stir to combine.
Store your homemade limoncello in a cool, dark place and continue to swirl it for 3 weeks or up to 40 days.
Use a funnel to transfer your limoncello to the glass gift bottles or chill and serve!
