1lb.frozen cherriespitted
1tbsp.Purecane zero-calorie sweetener
1tbsp.cornstarch
1tbsp.waterjust a splash to help combine
1eggbeaten (for egg wash)
For the Glaze
½cuppowdered sugar
2tbsp.heavy whipping cream
¼tsp.vanilla extract
Instructions
Step 1: Make the Cherry Filling
In a medium saucepan, combine the pitted frozen cherries, Purecane sweetener, cornstarch, and a splash of water.
Cook over medium heat, stirring occasionally, until the cherries break down slightly and the mixture simmers and thickens into a glossy, pie-like filling.
Remove from heat and allow the filling to cool for at least 10 minutes before assembling. (Crucial step so the hot filling doesn't melt the butter in your pastry!)
Step 2: Assemble the Tunrovers
Unroll your thawed puff pastry sheets onto a lightly floured surface. Cut each sheet into 4 equal squares, giving you 8 squares total.
Place 1 to 2 tablespoons of the cooled cherry filling into the center of each square.
Fold the pastry over diagonally to form a triangle.
Use the tines of a fork to firmly crimp and seal the edges together.
Cut a tiny slit in the top of each turnover to let steam escape, and brush the tops lightly with the beaten egg wash.
Step 3: Choose Your Bake Method
Air Fryer Method: Arrange the turnovers in a single layer in your air fryer basket (work in batches if needed). Bake at 350°F for 12 minutes, or until puffed and golden brown.
Oven Method: Preheat your oven to 400°F. Place the turnovers on a parchment-lined baking sheet and bake for about 25 minutes, until beautifully golden and flaky.
Step 4: Glaze and Serve
While the turnovers cool slightly, whisk together the powdered sugar, heavy whipping cream, and almond extract in a small bowl until completely smooth.
Drizzle the glaze generously over the warm turnovers. Serve immediately and enjoy!
