Ingredients
10ozbag Garbanzo Bare Beans
1rib celerythinly sliced
2green onionsthinly sliced
2 1/2tablespoonsmayonnaise
2teaspoonslemon juice
1teaspooncelery seed
8slicesmulti-grain bread
5oz.arugula
Instructions
In a medium bowl, add in the 10oz bag of Garbanzo Bare Beans. Smash with a fork.
Combine the chickpeas with the thinly sliced celery and green onions, mayonnaise, lemon juice, and celery seed. Add kosher salt and fresh ground pepper to taste. Taste and salt until the flavor pops! If the salad is dry, add more mayonnaise.
Assemble the chickpea salad sandwich: Place the chickpea spread onto one slice of the bread. Add arugula and top with the another slice of bread.

You can use any type of bread that you would like to serve the Chickpea Salad Sandwich. If you are avoiding bread, you could place it on top of a bed of lettuce, eat the salad straight from the bowl, or even make a lettuce wrap!
