Pie Crust
1refrigerated pie crust dough
1tablespoon flour
Blueberry Filling
2pintsNorth Bay blueberries
1/4cupturbinado sugarplus more for sprinkling
1lemonjuiced
3tablespoonsall-purpose flourplus more for dusting
3/4teaspoonsground cinnamon
1largeeggbeaten to blend
1tablespoonwater
Instructions
Preheat the oven to 400℉. Remove the pie dough from the fridge and let it sit at room temperature for 15 minutes.
Roll the dough into an eleven-inch circle between floured pieces of wax paper.
Transfer the dough to a prepared baking sheet, cover with plastic wrap, and chill in the fridge for 15-30 minutes.
Toss the blueberries, sugar, lemon juice, flour, and cinnamon in a medium bowl until the blueberries are coated.
Grab the crust from the fridge, remove the wax paper, and spoon the blueberry filling, leaving a two-inch border, and fold over the edges.
Mix the egg and water and brush the crust with the egg wash.
Sprinkle the blueberry galette with sugar and bake for 30-40 minutes. Serve warm with a scoop of vanilla ice cream.
Notes
Place an 8-inch cake pan in the middle of your crust and gently press to leave an indentation. This marks how far from the edge your filling should be.
