There’s a down-home kind of science to making the perfect bread, but quick bread recipes make it fast and easy to bake a loaf. Preheat the oven to 350ºF. Spray a loaf pan with nonstick spray.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and pepper.
In another large bowl, toss together the tomato, basil, and garlic. Add the eggs, olive oil, and milk. Toss again to coat everything.
Pour the wet ingredients into the dry ingredients and stir until mostly combined. Add 1 cup of the cheese and continue to stir until everything is evenly dispersed. Batter will be thick.
Pour the batter into the prepared loaf pan. Spread evenly with a spatula and sprinkle the remaining 1/4 cup of cheese on top of the batter.
Bake loaf for 55-60 minutes (check with inserting toothpick in the center - it will be done when the toothpick comes out mostly clean). Allow to cool in the pan at least 15 minutes before removing and serving warm. Loaf freezes well, up to 2 months. Thaw in the refrigerator overnight.
Glorys® Chia Jam
Over medium heat, in a large sauté pan, sauté onions and garlic for 2-3 minutes.
Add the Glorys®, lemon juice and zest, balsamic vinegar, and maple syrup. Cook on medium heat about 10-15 minutes until most of the liquid has cooked off.
Stir in the chia seeds and cayenne, if using and remove from heat.
Allow to cool and place in airtight jars. Place in the refrigerator to chill and thicken for several hours overnight.
