Dressing
1/4cuptahini
1/4cupapple cider vinegar
2tablespoonspure maple syrup

2cupsshredded green cabbage
1cupshredded red cabbage
1cuproasted edamame beans

Instructions
Dressing
In a small bowl, combine the tahini, maple syrup, apple cider vinegar, salt, and pepper. To thin out your dressing mixture to your desired consistency, add 1-2 tablespoons of water as needed. Stir to combine and set it aside to rest.
Salad
In a large mixing bowl, add all your salad ingredients - apples, red and green cabbage, edamame, chives, celery, sunflower seeds, golden raisins (if you're using them), and parsley. Season with salt and pepper.
Use a pair of tongs to mix the salad ingredients together.
Pour the dressing over the bowl of apple slaw. Then use the tongs to toss the salad until all of the ingredients are evenly coated with dressing.
Squeeze a little fresh lemon juice over the top and serve.
