Ingredients
6earscorn
4cupswatermelonslices then grilled and cubed
1/4cupradishesfinely diced
1/4cupgreen onionsroughly chopped, light and dark green parts only
1tbsplime juice
1jalapeñoseeded and finely chopped
2tbspbutter
1/4tspfreshly ground pepper
1/2tspsalt
1/3cupcilantroroughly chopped
1/2cupCotija cheesecrumbled
1/4tspchili powder
1/3cupchipotle mayo
Instructions
On a grill or in a grill pan, prepare the corn elote-style: Coat corn cobs with butter and mayo and grill. Rotate frequently and cook until all sides are golden brown. Remove from grill plan. Remove corn kernels from cob.
When the grill is hot, add the watermelon slices in a single layer and grill until warmed through and grill marks appear, 2 to 3 minutes per side.
Toss the corn kernels and watermelon with the rest of the veggies in a large bowl.
Mix in chipotle mayo, chilli powder and lime juice.
