Blood Orange Vinaigrette

blood orange juice
freshly squeezed (approximately 4 blood oranges)

champagne vinegar
(can sub white or red wine vinegar)

dijon mustard

shallot
minced

clove
garlic
minced

honey

olive oil
extra virgin
salt and pepper
to taste
Instructions
Place all ingredients in a bowl except for the oil & whisk to combine.
Slowly drizzle in the oil, whisking constantly.
Season with salt & pepper.
