Place about 1/4" of olive oil into an 8 oz mason jar, making sure the bottom is fully coated.
Place a square of feta into the jar. Place 1 sprig of thyme and oregano on top. Add about 1/3 of the garlic and a pinch of black pepper. Repeat this step, forming layers, about 3 times or until the jar is full.
Add remaining olive oil to the jar, until the feat is covered. Cover with a lid and refrigerate overnight, allowing the feta to marinate and intensify in flavor.
Notes
Store in refrigerator and used within three days. Discard after two hours at room temperature.
