Instructions
In an Instant Pot, saute together garlic and onions until fragrant (about 2 minutes).
Add the remaining Chili-Lime Jackfruit ingredients to the Instant Pot. Stir to combine. Seal and cook on manual setting for 10 minutes. Release pressure.
While Jackfruit is cooking in the Instant Pot, prepare your burrito bowl ingredients.
Create burrito bowls by layering rice, black beans, lettuce, Chili-Lime Jackfruit, avocado, cilantro, cream cheese, and cojita cheese.
Notes
*If you cannot find green jackfruit at your grocery store, you can use young canned or pouched jackfruit. Look for jackfruit that has been packed in brine or water.
