This Grilled Peach Salad is the most refreshing summer salad recipe. The peaches are grilled until a golden crust is developed, served over arugula, roasted pecans, goat cheese and covered with a homemade honey dijon vinaigrette dressing.
– Prima® peaches, ripe and firm – Olive oil – Arugula – Roasted pecans – Goat cheese
Step 1 Grilling Peaches: First, heat your Blackstone or grill to medium-low heat. Wash and cut the Prima® peaches in half and remove the pits. Brush the peach halves with olive oil. Place the peach halves on the Blackstone or grill.
Step 2 Cook each side until grill marks form, about 3-4 minutes. Remove from grill. If you prefer, you can cut each half into 3-4 wedges or you can leave them as rounds.
Step 3 In a small bowl, whisk together honey, dijon mustard, white wine vinegar and olive oil. Then, add kosher salt and pepper to taste.
Step 4 First, in a large salad bowl, add arugula, roasted pecans and goat cheese. Then, add the grilled peach wedges. Finally, drizzle with balsamic dressing. This Grilled Peach Salad can be served immediately or stored in the refrigerator until ready to serve.
