This Mexican Street Corn recipe is a common Mexican street food that is made by grilling corn on the cob and then coating it with a mayonnaise mixture.

corn

jalapeño

mayonnaise

cotija cheese

smoked paprika

How to Make Mexican Street Corn Baked Potatoes:

With whatever method you are using to cook the corn on the cob, coat the corn with the butter and mayo.

Next, place potatoes in the microwave for 6-8 minutes, until fork tender. Follow the directions on the label if you are placing more than one at a time.

Once the corn has heated through and golden brown, use a sharp knife or a kernel cutter to remove the corn from the cob into a medium-sized bowl.

Then, place the remaining ingredients (with the exception of the cojita cheese) in the same bowl as the corn, and stir until combined.

Carefully remove the wrapper from the potato. Use a knife to slice the top of the potato. Then, top with the Mexican Street Corn mix and cojita cheese.
