Ingredients
1small bunchbroccolicut into florets
1orange bell peppersliced into rounds
1/2red onionsliced thinly
1/4cupkalamata olives
4clovesgarliccut in half
1/2cupgrape tomatoes
1lemonsliced thinly
6ozfeta cheesecut into squares
1tbspolive oil
salt and pepper
1tbspfresh oregeno
Instructions
Preheat the oven to 425 degrees. Line a baking sheet with a silicone mat or parchment paper.
Add broccoli, bell pepper, red onion, olives, garlic, tomatoes, lemon, and feta cheese to the baking sheet. Drizzle with olive oil. Season with salt and pepper.
Roast in the oven for 20-25 minutes. Toss the vegetables, not the cheese, halfway through roasting.
Remove from oven and sprinkle with fresh oregano. Serve over orzo rice, fusilli pasta, brown rice, or farro (optional).
