Calling all potato fans! These Hasselback Potatoes are the easiest side dish to any meal. Thinly sliced potatoes (be sure not to cut through the skin, we will show you a trick below!), loaded with a garlicy butter. They are simple side, oh so delicious and kid approved!

Ingredients
6PotatoesRed, Yukon, Russet or Combination
Kosher Saltto taste
Black Pepperto taste
1/2cbuttermelted
2tbspfresh parsleychopped
2tbspgarlicminced
Instructions
Preheat oven to 375°.
Start by washing and drying your potatoes.
Next, slice the potatoes about every 1/8" or so, ensuring not to slice through the potato. Place on a baking sheet and repeat for remaining potatoes.
Place melted butter, fresh parsley and garlic in a bowl and mix until well combined.
Using a pastry brush, brush the garlic butter mixture over each potato ensuring to get into each slice of the potato.
Top with kosher salt and pepper.
Bake for 35-45 minutes until potato skin is crispy.
If you have any leftover garlic butter mixture, serve along side the hassleback potatoes.
