2fresh ripe Prima® peachescut into 1-inch pieces or sliced
2tomatoespreferably heirloom, cut into bite size pieces (remove seeds and juices if too much)
1/4cupextra-virgin olive oil
2Tablespoonswhite balsamic vinegar
10-12fresh basil leaveswhole
8ozfresh mozzarella sliced or cut into bite size pieces
Flakey saltfor serving
Freshly cracked black pepperfor serving
Instructions
On a platter, arrange mozzarella, tomatoes, basil leaves and sliced peaches.
Drizzle with olive oil and white balsamic vinegar.
Season with salt and pepper and top with fresh basil.
