Curry chicken lettuce wraps are a lighter alternative to sandwiches with the same convenience. Make the filling ahead for easy and quick assembly that's nutritious and filling.

1/2cupmayonnaise
1tablespoon fresh lime juice
2-3tablespoons fresh cilantrochopped
2teaspoonscurry powder
1/2teaspoonsalt
2cupschickencooked and diced
1/2applediced
1celery stalkfinely diced
1/3cupTanimura & Antle® Artisan Sweet Italian Red Onionfinely diced
1/4cupcashews
dried cherries or cranberrieson top
Instructions
Stir the mayonnaise, lime juice, cilantro, curry powder, and salt in a bowl until mixed and creamy.
Add the chicken, apples, celery, and onion to the same mixing bowl and stir until all the ingredients are coated with the curry sauce.
Use a spatula to fold in the cashews.
Rinse the lettuce under water and separate them into individual leaves. Use a paper towel to pat each leaf dry. Lay each leaf on your plate to assemble your lettuce wraps.
Add a large spoonful of the chicken mixture to each piece of lettuce.
