16oz.cherry tomatoeswashed
2tbspolive oil
1tbspgarlicminced
1tbspItalian seasoning

Once you have selected your tomato variety, slice the tomatoes in half. You can also leave the tomatoes whole, however, they will burst on the baking sheet and don't look as pretty! If you are roasting tomatoes for a recipe like our Roasted Tomato Soup recipe, you can leave whole as presentation doesn't matter and cuts down on time.
Simply season the tomatoes with olive oil, garlic and herbs before placing on a baking sheet.
Place on a baking sheet and roast for 20-25 minutes.
The tomatoes will carnalize in the oven and softens the tomatoes that are packed full of flavor.
