Start by cutting the mango. I had a kids fruit cutter on hand that made it really easy but could be done with a knife. I used a flower cutter for the feet and cut them in half. Then a heart for the beak but in half.
Spread the yogurt onto a plate or shallow bowl. Working in, working out build the shape of the belly of a penguin.
Next, this is completely optional, you can cut a fruit strip for eye and top of the head details.
Last, place the eyes with a dollop of yogurt or frozen yogurt blueberries, beak and the feet.
Notes
We thought it was a cute addition to make frozen yogurt blueberries. If you choose to make these, you’ll want to make them first before putting together the penguin so that they can harden.
Simply tossed blueberries that have been washed and completely dried into a cup or two of yogurt. Place on a parchment lined baking sheet and place in the freezer.
Allow to harden. This typically takes around 45 minutes to an hour.
Once the yogurt has hardened, you can use these for the eyes or to add as detail to the penguin. You could even use as the belly of the penguin if you wish!
