Ingredients
16ozbaby spinach
20ozNatureSweet Constellations®2 10 oz. containers
3tablespoonsavocado or olive oil
1smallFrench breadcut into 1-inch cubes (appx 6 cups)
1teaspoonkosher salt
1cucumberunpeeled, seeded, and sliced 1/2-inch thick
1/2red onionthinly sliced
8ozburrata cheese
Vinaigrette Ingredients:
1garlic cloveminced
1teaspoonDijon mustard
4tablespoonsChampagne vinegar
1/2cupgood olive oil
1/2teaspoonkosher salt
1/4teaspoonfreshly ground black pepper
Instructions
Heat the oil in a large pan. Add the bread and salt; cook over low to medium heat. Toss frequently for 10 minutes or until brown. Add more oil as needed.
For the vinaigrette, whisk all the ingredients together.
In a large bowl, lay down the baby spinach. Add the NatureSweet Constellations®, cucumbers, red onion and burrata. Next, add the sauteed bread cubes and toss with the vinaigrette.
