Ingredients
For the Dressing
⅓cupolive oil
¼cupred wine vinegar
1Tbspgarlic powder
2Tbsplime juice
1Tbspgranulated sugar
Kosher salt and black pepper to taste
For the Salad
1 10ozNatureSweet® Cherubs®diced
1largeavocadocubed
½sweet onionfinely diced
15ouncesblack beansrinsed
15ouncesblack-eyed peas rinsed
1½cupsfresh sweet corn kernels
1orange bell pepperseeded and finely diced
1jalapeñoseeded and finely diced
½cupchopped cilantro leaves and tender stems
Instructions
Combine Cherubs®, avocado, sweet onion, black beans, black eyed peas, corn, bell pepper, jalapeno pepper, and cilantro in a large bowl. Toss well so that ingredients are well-combined.
In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
Pour dressing over other ingredients and stir.
Keep refrigerated. If not serving immediately, be sure to toss/stir well before serving.
