Ingredients
2headsRomaine
1TbspOlive oil
3/4cupYellow onionchopped
1lb95% lean ground turkey
2clovesGarlic
1TbspChili powderpreferably 2 tsp regular chili powder and 1 tsp ancho chili powder
1tspGround cumin
1/2tspPaprika
1/2cupTomato sauce
1/2cupLow-sodium chicken broth
Instructions
Heat olive oil in a non-stick skillet over medium-high heat. Add onion and sauté for 2 minutes. Add turkey and garlic, season with salt and pepper, and cook, tossing and breaking up turkey occasionally, until cooked through, about 5 minutes.
Add chili powder, cumin, paprika, tomato sauce and chicken broth. Reduce to a simmer and cook for about 5 minutes until sauce has reduced. Add salt and pepper to taste.
Chop topping ingredients to desired size & place in serving bowls.
To prep Romaine, chop the root end off, as close to the end as possible. Separate leaves.
To assemble taco cups, place two closely sized Artisan Romaine leaves on top of each other, top with ground turkey mixture and then toppings of your choice.
