Ingredients
1small cabbage finely dicedor iceberg lettuce
3-4cucumber
1bunch green onions sliced
1/4cupchives finely sliced
Green Goddess Dressing
juice of 2 lemons
1/4cupolive oil
2tbsprice vinegar
2clovesgarlic
1small shallot
1cupfresh basil
1cupspinach
1/3cupnutritional yeast
1/4cupwalnuts
1tspsalt
Instructions
In a large bowl add the cabbage, cucumbers, green onions and chives. Toss together.
In a food processor or blender combine lemons, olive oil, rice vinegar, garlic, shallot, basil, spinach, nutritional yeast and walnuts. Blend until smooth.
Pour the Greek Salad Dressing over the top of the salad ingredients. Stir to combine until well coated.
