Shrimp and Cucumber

Instructions
Toss shrimp in oil and creole seasoning and cook in a preheated, heavy-bottomed skillet until slightly blackened, about 2-3 minutes per side.
Make avocado sauce. Cut avocado in half and twist to locate seed. Remove seed and use spoon to remove pulp from skin. Mash pulp with fork and add lemon juice, salt, cilantro, green onion, and cayenne pepper to taste. Gently mix.
Slice cucumbers into 1/4 inch slices.
Place spoonful of avocado sauce on cucumbers and top with shrimp. Garnish with chopped cilantro.
