6earscornhusks and silk removed
1tbspmayonnaise
2tbspbutter
1jalapenoseeded and finely chopped
1/4red bell pepperseeded and finely diced
1/2smallred onionfinely diced
1limejuice only
1/4cupcilantrochopped
1/2tspchili powder
1/4tspsmoked paprika
cojita cheeseto taste
Instructions
On a grill or in a grill pan, prepare the corn elote-style: Coat corn cobs with butter and mayo and grill. Rotate frequently and cook until all sides are golden brown. Remove from grill plan. Remove corn kernels from cob.
Toss the corn kernels and remaining ingredients together in a large bowl. Top with cojita cheese and serve.
