2lbsboneless, skinless chicken breastscut into 1 inch strips
1red bell peppercut into strips
1orange bell peppercut into strips

1lime (juice only)
1tbspcorn starch
2tspchili powder
1tspsalt
2tspsmoked paprika
1tspcumin
1/2tspgarlic powder
1tspcorriander
1/4tspchipotle chili powder

Instructions
Preheat oven to 400 degrees.
Combine all spices in a large mixing bowl. Add bell peppers, white onions, lime juice, and chicken. Toss until evenly coated.
Place chicken and veggies onto a baking sheet and bake for 18-25 minutes, or until chicken is cooked through. Remove from oven and garnish with lime wedges.
Serve with warm tortillas and pico de gallo.
Notes
*Serve with pico de gallo and tortillas. Choose corn tortillas to keep this meal gluten-free.
