Step 1 Put the coconut oil in a large skillet and heat until melted. Add sweet potatoes, red onion, and bell pepper to the skillet. Allow vegetables to cook until tender. Cooking a little longer to “burn” will add more flavor.

Step 2 Sprinkle the salt, Pepper, and some cayenne pepper into the skillet and mix until fully incorporated.

Step 3 Create two holes in the veggies for the eggs using a spatula or spoon and add them in (I recommend setting the temperature too low while doing this). Cook your eggs for as long as you want. I prefer an over-easy egg.
