These Mushroom Vegan Tacos are quick, easy and packed full of flavor.  These “meaty’ vegan tacos are hearty and delicious, and you won’t even miss the meat.

Mushrooms are a great substitute for meat as they have a meaty texture. These Mushroom Vegan Tacos are a wonderful option for a quick weeknight meal.

Ingredients

portabella mushrooms

taco seasoning

olive oil

salt and pepper

taco shells

How to Make Mushroom vegan Tacos (Blackstone Version):

Ensure the surface is cleaned and olive oil has burned off. Then, place the Portabella on the griddle and coat in olive oil. Cook 3-5 minutes per side.

Produce Mom TIP: The mushroom caps will soak up a lot of olive oil. Be sure the portabella cap has plenty of olive oil so that it can become soft.

Next, transfer the portabellas to a bowl. Pull them apart with two forks to get that authentic ‘pulled’-look.

Once in the bowl, add in the taco seasoning and mix.

Assemble your tacos to  your liking.
