– 3.5 cups cooked bulgur wheat (couscous or quinoa can also be used) – 2-3 chopped small cucumber – 1/2 cup chopped parsley – 1/2 cup chopped mint – 1/3 cup chopped red onion – 1/2 cup chopped pistachios – 1 (15oz) can chickpeas, drained and rinsed – Juice of 1 lemon – 1/4 cup extra virgin olive oil – Salt & pepper – 1/2 cup crumbled feta
Step 1 Start by making your bulgur wheat, quinoa or couscous according to the packaging. Allow it to slightly cool before adding in the remaining ingredients.
Step 2 Prepare your remaining ingredients by chopping the cucumber, red onion, mint and parsley and placing in a large bowl.
Step 3 Then, add everything to a large bowl. Be sure to stir until everything is mixed well. Cover with the lemon juice.
