Lemon Pepper Chicken & Summer Squash Sheet Pan

Summer squash includes varieties such as zucchini, pattypan squash, yellow squash, and chayote squash. While all are delicious in their own right, for this recipe we are using green zucchini and yellow squash. Both have a light, mild flavor and their contrasting colors look appealing when used together.

Produce Moms Tip: Because of their mild flavor, thin skin, smooth texture, and bright colors, yellow squash and green zucchini are very kid-friendly. They can be cooked in a variety of ways, so introduce your kids to summer squash in different dishes and see which ones they like best!

  1. This was wonderful, so glad I came across it. My 3.5 daughter loved it also. If you substituted shrimp with it how long would it take to cook?

    1. It’s a family favorite in our household. If you were to use shrimp, I would say 12-14 minutes for the shrimp.
