1. Tanimura & Antle Artisan® Lettuce

Each package of Tanimura & Antle Artisan® Lettuce comes with four petite heads of lettuce. Each variety is carefully selected from the six types of lettuce, with flavors that complement each other perfectly. 2. Figs

Figs are the perfect addition to your fresh fall salad. With a mild fruity flavor and a taste similar to dried raisins or dates, figs add just the right amount of sweetness. The jam-like flesh balances the crispness of the Tanimura & Antle Artisan® Lettuce and the creamy goat cheese chunks. Cut your figs into halves or quarters, depending on the size, for a bite of sweetness (The kids love it, too)! 

3. Pecans

Look for a bag of toasted pecans at the grocery store in the baking aisle. They are especially easy to find during the fall and early winter months because of Thanksgiving and Christmas. Toasted pecans bring out the nuttiness and add an extra layer of flavor to your salad. 

If you can’t find already toasted pecans, buy plain nuts and bake them at 350℉ for five to ten minutes.  

4. Goat Cheese

Salads are an easy way to toss a balanced meal together quickly. Add crumbled goat cheese to your fig salad for a rich, creamy flavor. Use your fingers to break it into pieces and sprinkle the goat cheese chunks on top of your fig salad. 

If you don’t see goat cheese in the dairy section of your grocery store, look for its French name, “chèvre cheese”. 

5. Hemp Seeds

Also known as hemp hearts, hemp seeds are grain-free with healthy fats, protein, and fiber. Although small, they are nutrient dense and aid in digestion, promote clearer skin, and help reduce inflammation.1 However, since hemp seeds are high in fats and calories, it’s best to eat them in moderation. You’ll only need half of a cup to make your fig salad a balanced meal for your family. 

Look for hemp seeds (or hearts) in the aisle with the nuts and seeds or the organic and natural foods.

Step 1: Add the balsamic vinegar, tahini, mustard, lemon juice, honey, garlic powder, salt, and pepper to a mason jar. Put the lid on tight and vigorously shake the jar to combine the dressing ingredients.

Step 2: Remove the petite lettuce heads from the packages and tear or chop each head.  Because Tanimura & Antle field packs everything for optimum freshness, be sure to rinse your chopped lettuce in a colander or salad spinner.  If you have time, let the lettuce crisp in the refrigerator for 15-20 minutes.  Add your Tanimura & Antle Artisan® Lettuce to a large salad bowl and pour half of your dressing over the top of the lettuce. Use salad tongs to toss the lettuce until it’s coated with the vinaigrette.

Step 3: Rinse your figs under cold water. Then, use a knife to cut off the stems and cut your figs in half lengthwise from the stem to the bottom. If your figs are large, cut each half again to make quarters, or if you prefer smaller pieces. Sprinkle the figs over the top of your lettuce. 

Step 4: Slowly pour the remaining dressing over the top of your lettuce and figs. Distribute evenly. 

Step 5: Use your fingers to pull apart pieces of goat cheese. Sprinkle them evenly on your salad. 

Step 6: Scatter the pecans and hemp seeds, and serve your your delicious Fig Salad With Artisan Lettuce.

Fig Salad

Ingredients 

Vinaigrette

  • 1/2 cup balsamic vinegar
  • 1/4 cup tahini
  • 1 tablespoon Dijon mustard
  • 1 whole lemon juice
  • 1 teaspoon honey
  • 1 teaspoon garlic powder
  • salt and pepper to taste

Salad

  • 2 packages Tanimura & Antle Artisan® Lettuce
  • 24 figs stems removed and halved
  • 1 cup toasted pecans
  • 1 cup crumbled goat cheese
  • 1/2 cup hemp seeds
  • cracked pepper to taste
  • salt to taste

Instructions 

  • Add all of the dressing ingredients – balsamic vinegar, tahini, mustard, lemon juice, honey, garlic powder, salt, and pepper to a mason jar. Shake until dressing ingredients are mixed.
  • Cut off the stems and half or quarter the figs, depending on size, and set aside in a small to medium bowl.
  • In a large salad bowl, use tongs to toss all of the Tanimura & Antle® Artisan Lettuce with half of the vinaigrette.
  • Place the figs on top of the salad.
  • Drizzle the salad with the remaining half of the vinaigrette.
  • Sprinkle the pecans, goat cheese, and hemp seeds evenly over the top.
  • Optional: Sprinkle a few grinds of cracked pepper and a few pinches of sea salt on top.

To thin out your dressing, add a teaspoon of water at a time and shake before adding more to get your desired dressing consistency.
