Fresh, Flavorful Grilled Corn Salad with Honey Lime Dressing in Just 25 Minutes

This BBQ Grilled Corn Salad is the perfect balance of fresh and smoky for your next BBQ cookout. Prep the tomatoes, cucumbers, red onion, and basil while the corn chars on the grill. Then, toss it all together, top with feta, and drizzle with a super easy honey lime dressing.

BBQ Grilled Corn Salad Ingredients
All seven corn salad ingredients can be found in the produce section of your grocery store. You may already have the pantry dressing ingredients on hand, but let’s double check before you get started.
Produce
We love to use Dandy® corn because they come pre-shucked and ready to heat in a recyclable tray of four or six. That means no dealing with husks and stubborn corn silk. Just remove the wrap and place your ears of corn on the grill grate. It doesn’t get any simpler than that!
While you’re in the produce aisle, grab your cherry tomatoes, cucumber, bell pepper, red onion, and basil. It’s the perfect crunchy, sweet, juicy, crisp bite — like summer on a spoon.
Dressing
The homemade dressing is a simple mix of fresh lime juice, extra virgin olive oil, honey, salt, and pepper. We prefer to use the juice of fresh limes for a brighter, more intense flavor that pairs well with the fresh produce and highlights the natural sweetness in this grilled corn salad recipe.

How to Make BBQ Corn Salad
Charred corn is the key to the best grilled corn salad and one of our favorite sides for summer cookouts and parties. After that, it’s a simple toss of fresh ingredients, then serve in 25 minutes.
Step 1: Preheat the grill.
Preheat the grill to medium-high, 350℉ — 450℉ for a gas and charcoal grill.
Step 2: Char the ears of corn.
Lay the ears of corn directly on the grill grates and let it cook for 3-4 minutes, until charred. Rotate each ear of corn so each side has a beautiful char, about 8-10 minutes total.
Transfer the ears of corn to a cutting board to cool. When cool enough to handle, use a knife to cut off the charred corn kernels and transfer them to a large bowl.
Step 3: Prep the produce.
While the corn is on the grill, halve the cherry tomatoes, dice the cucumber and bell pepper, and chop the red onion and basil. Add all the fresh produce to the large bowl with the charred corn and toss with salad tongs to combine.
Step 4: Whisk the honey lime dressing.
Whisk the fresh lime juice, extra virgin olive oil, honey, salt, and pepper in a small bowl. We also love adding all the ingredients to a mason jar with a lid and letting our kids shake it until the ingredients are combined — they love it!
Step 5: Dress it up and serve.
Drizzle the dressing over the barbecue corn salad, top with creamy, crumbled feta, and serve.

BBQ Corn Salad
Equipment
- Grill gas or charcoal
Ingredients
- 6 ears Dandy® corn shucked
- 1 pint cherry tomatoes halved
- ½ cucumber diced
- 1 green or red bell pepper diced
- ¼ cup red onion finely chopped
- ⅓ cup basil rouchly chopped
- ½ cup crumbled feta
- 1 tablespoon fresh lime juice (from 1 lime)
- 3 tablespoons extra virgin olive oil
- 1½ tablespoons honey warmed
- 1 teaspoon sea salt
- pepper to taste
Instructions
- Preheat the grill on medium to high heat, 350℉ – 450℉.
- Place the ears of corn on the grill grate for 3-4 minutes, until it's charred.
- Rotate the cobs until the corn is charred on all sides, about 8-10 minutes total.
- Transfer the charred corn to a cutting board to cool slightly. Use a knife to cut the kernels off the cobs and place them in a large bowl.
- Add the tomatoes, cucumber, bell pepper, red onion, and basil to the same bowl and toss.
- In a small bowl or mason jar, whisk together the lime juice, olive oil, honey, salt, and pepper.
- Drizzle the honey lime dressing over the salad, top with crumbled feta, toss, and serve!
