Celery Fennel Salad

Homemade citrus dressing atop celery, fennel, Parmesan, and walnuts make a unique salad. Great for holidays or any time of year.

Ingredients 

Salad

  • 1 bag Dandyยฎ celery cut on the bias
  • 1 bulb fennel shaved/sliced thin
  • 6 oz shaved Parmesan cheese divided
  • 1/2 cup toasted walnuts

Garlicky Lemon Vinaigrette

  • 3/4 cup olive oil
  • 5 tsp vinegar red wine vinegar suggested*
  • Juice + zest from 1 lemon
  • 1 1/2 tsp dijon mustard
  • 2 cloves garlic minced
  • 3/4 tsp salt
  • 1/2 tsp pepper

Instructions 

  • Toss the celery and fennel together with 3 oz of parmesan cheese. Layer on a platter.
  • Drizzle with vinaigrette.
  • Top with remaining Parmesan cheese and toasted walnuts.

Notes

*Champagne vinegar or balsamic vinegar also work wellย
