Have you seen the pasta bake going viral on TikTok? Looks delicious, doesn’t it? We thought so too! We brought this popular dish to the Indy Style kitchen this week and added a few twists of our own.
Comparing the other dishes we showcased would be like comparing… well, apples and oranges. But what all of these February Indy Style dishes have in common is that they’re delicious, nutritious, and perfect for making this snowy, dreary season a little brighter!
Mandarin and Pomegranate Overnight Oats
We’re in the midst of domestic citrus season, which means that some of the most famous citrus-growing regions in the world, like Florida and California, are growing their best fruits right now.
We’ve become obsessed with Big Honeys®, dekopon mandarins from Trinity Fruit Company. These softball-sized, easy-peel mandarins are seedless and delightfully sweet. Originally from Japan, Big Honeys® are new to California groves but have quickly become a citrus-lover favorite.
We use Big Honeys® along with SweetHeart Dried Pomegranate Seeds in our latest favorite breakfast dish: Mandarin and Pomegranate Overnight Oats. It’s a convenient, affordable way to make sure you always have breakfast ready to go in the morning. Overnight Oats are simple to make and because everything is done the night before, just take it out of the fridge in the morning and it’s ready to eat!

TikTok-Inspired Baked Feta Pasta
We love watching TikTok – both for the tasty recipes than the viral dances! Baked feta pasta has been making the rounds on social media, and for good reason. It’s the kind of gooey, photogenic dish that makes for a video you can practically smell!
This easy-to-make dish comes with just one problem: it can be difficult to find the exact ingredients you need to make it. Right now, grocery stores may not have the feta block you need in stock. So for this February Indy Style segment, we came up with an alternative you can use in a pinch – and added a few extra veggies, of course!
It’s estimated that demand for feta cheese blocks has increased by as much as 500 percent! But what you can find are blocks of cream cheese and cartons of feta cheese crumbles. Simply add the block of cream cheese to the pan and generously sprinkle it with feta to give your dish the same delectable flavor.
When this dish comes out of the oven, it looks absolutely dreamy. It’s made in a couple of steps: the tomatoes, feta, and oil are baked together first, then incorporated together before the pasta is added.
We use juicy, flavorful NatureSweet Glorys (and lots of them) in this recipe for the perfect tomato flavor. The secret ingredient is pasta water, the starch-filled water you boiled the pasta in. It helps bind all of the ingredients together.

Smitten Apple Crumble Mug Cake
We were so excited to showcase our Baked Feta Pasta that we ran out of time to dig into our new favorite dessert: the Smitten Apple Crumble Mug Cake! Like our other February Indy Style recipes, this dessert requires few dishes and is easy to clean up after. In fact, you can eat it out of the same mug you cook it in. Best of all, you can make it in just a minute and a half in the microwave!
We’re head-over-heels for the apples we used in this recipe. You might say we’re smitten! Sage Fruit Company’s Smitten Apples are a pink-and-yellow variety filled with a juicy, crunchy, well-balanced flavor. They’re perfect for eating out of hand or baking into recipes like this one:
Smitten Apple Crumble Mug Cake
Ingredients for Crumble
- 1/4 cup butter, melted
- 1/2 cup quick oats
- 2 tablespoons brown sugar
- 2 tablespoons maple syrup or honey
- 1 teaspoon cinnamon
- pinch of salt
Ingredients for Apple filling
- 2 Smitten apples, chopped to bite-size pieces
- 1 tablespoon flour
- 1 tablespoon lemon juice
- 1 tablespoon brown sugar
- 2 tablespoons chopped walnuts
- In a bowl, combine all the ingredients for the crumble and mix well.
- In a separate bowl, add the ingredients for the apple filling and mix well.
- Divide the apple filling mixture among two mugs and top with crumble.
- Microwave each mug, separately, on high for 3-4 minutes, until mixture is bubbly.
- Carefully remove hot mugs from the microwave and top with vanilla ice cream and a sprinkle of cinnamon.
- Serve and enjoy!
