Raspberry Keto Mousse

  • 1cup heavy cream
  • 1tbsp monkfruit sweetener
  • 12oz North Bay Produce raspberries(2 packages)
  1. Pour heavy cream into bowl. Begin mixing with a beater.
  2. Sprinkle in sweetener and continue mixing until stiff peaks form
  3. Add 6 oz (1 package) raspberries
  4. Continue to mix. Berries will break down and fluff will turn pink.
  5. Cover bottom of parfait-style cups or trifle-style bowls with whole raspberries. Fill to top with mousse.
  6. Top with raspberries. Add mint leaf or dark chocolate shavings (optional). Serve and enjoy!
