  • 1small bunch broccolicut into florets
  • 1 orange bell peppersliced into rounds
  • 1/2 red onionsliced thinly
  • 1/4cup kalamata olives
  • 4cloves garliccut in half
  • 1/2cup grape tomatoes
  • 1 lemonsliced thinly
  • 6oz feta cheesecut into squares
  • 1tbsp olive oil
  • salt and pepper
  • 1tbsp fresh oregeno
  1. Preheat the oven to 425 degrees. Line a baking sheet with a silicone mat or parchment paper.
  2. Add broccoli, bell pepper, red onion, olives, garlic, tomatoes, lemon, and feta cheese to the baking sheet. Drizzle with olive oil. Season with salt and pepper.
  3. Roast in the oven for 20-25 minutes. Toss the vegetables, not the cheese, halfway through roasting.
  4. Remove from oven and sprinkle with fresh oregano. Serve over orzo rice, fusilli pasta, brown rice, or farro (optional).
