Chocolate-Dipped Peanut Butter Stuffed Dates

Ingredients
  • 10 Medjool datespitted
  • 4tbsp peanut butteror sun butter or nut butter of your choice
  • 1/2cup dark chocolate chipsor preferred melting chocolate
  • 1/4cup peanutschopped or crushed
Instructions
  1. Cut a long slit lengthwise in each date.
  2. Stuff each date with peanut butter (about a teaspoon each).
  3. Melt chocolate according to package instructions. Dip half of each stuffed date into the melted chocolate. Place dipped dates on a cooling rack and allow excess chocolate to drip off.
  4. While the chocolate is still melted, sprinkle crushed peanuts onto the chocolate-dipped side of each date. NOTE: You can also dip the dates in peanuts but this tends to be messier.
  5. Allow the candies to rest on the cooling rack until the chocolate has set. Store in an air-tight container until ready to serve.
Recipe Notes

If you’d like to cover the entire date with chocolate, use 1 cup of chocolate chips instead of 1/2 cup and dip the entire date. Use a toothpick to hold the date while dipping it into the chocolate.
