Apple and Bamboo Stir Fry

  • 1tbsp coconut oil
  • 2cloves garlic
  • 3 scallionscut into 1-inch pieces
  • 1 carrotsliced thin
  • 8oz bamboo shoots
  • 1 applesliced thin
  • 2tbsp soy sauce
  • 1tbsp oyster sauce
  • 14oz extra firm tofucubed
  1. In a large skillet, heat coconut oil over medium heat.
  2. Add garlic and carrots to skillet and cook for 2 minutes. Next add apple and bamboo and cook for 2 minutes. Add remaining ingredients and cook for an additional 3-5 minutes, stirring occasionally.
  3. Serve warm on a bed of rice or noodles (optional).
