Grandma Gray’s Apple Hash

  • 4tbsp extra virgin olive oil
  • 1/2 sweet yellow onionchopped
  • 2large Yukon Gold potatoeschopped
  • 1 1/2cups sliced appleschopped (approx. 2 bags of apple slices)
  • 1tbsp fresh thymechopped (can sub dried thyme)
  • kosher saltto taste
  • 3-4tbsp brown sugar
  1. Chop apple slices into ¼ inch cubes.
  2. Chop potatoes into ¼ inch cubes.
  3. Heat Olive Oil in a medium, deep skillet over high heat.
  4. Add onion and sauté until tender. Add potatoes and sauté for about 10 minutes, stirring frequently.
  5. Add apple, thyme, and brown sugar and sauté for 10 minutes. Make sure the sugar gets a little sticky.
  6. Garnish with fresh thyme and serve.
