Watermelon Tomato Salad

  • baby spring mix
  • 12slices vine ripe tomato
  • 6squares watermelon1/2″ thick, 4×4 squares
  • 1/3cup queso frescocrumbled
  • 1/3cup sweet onionsliced
  • salt and pepperto taste
Jalapeno Vinaigrette
  • 2 JalapeƱosseeded and minced
  • 3tbsp green onionthinly sliced
  • 2tbsp cilantrochopped
  • 1tsp agave nectar
  • 2cloves garlicminced
  • 1/4cup lime juicefreshly squeezed
  • 3/4cup extra virgin olive oil
  • salt and pepperto taste
Jalapeno Vinaigrette
  1. Whisk together jalapenos, green onions, cilantro, agave nectar, garlic, lime juice. Slowly drizzle in olive oil, whisk until well blended. Season with salt and pepper.
  1. Cut Watermelon into squares (see video above for demonstration). Slice tomatoes.
  2. In a medium bowl, toss baby spring mix with vinaigrette & season with salt.
  3. For each serving, place one watermelon slice on a plate, place some dressed spring mix onto watermelon. Top with tomatoes, cheese & sweet onions. Drizzle additional dressing over each serving. Season with salt and pepper.
