Baked Mushrooms with Lemon and Gruyere

  • 28 oz pkg Monterey Mushrooms®, sliced (White or Baby Bellas)
  • 1 lemon, zest and juice
  • 3tbsp avocado oil
  • 3cloves garlicsmashed
  • 1/2 red onionthinnly sliced
  • 1/4cup gruyereshredded
  • salt and pepperto taste
  • 5-6sprigs fresh thymeplus more to garnish
  1. Preheat oven to 375 degrees.
  2. Mix all ingredients in a large bowl until mushrooms are evenly coated.
  3. Place ingredients in a cast-iron skillet and bake for 15 minutes.
  4. Remove from the oven and garnish with additional thyme sprigs.
