Spicy SweeTango® Apple Sweet Potato Soup

Spicy SweeTango® Apple Sweet Potato Soup is a Caribbean-style soup. It is a well-balanced mix of heat and sweet. Jalapeños bring the heat and sweet potatoes and SweeTango® apples bring the sweet.

SweeTango® Apples are a cross between the sweet Honeycrisp apple and the tangy Zestar. They are crispy and sweet with a touch of citrus, honey, and spice. You can find SweeTango® Apples from Applewood Fresh from October through March, aka soup season!

You can adjust the heat in this soup to fit your preference. Tone down the spice by choosing a milder pepper, such as sweet banana pepper. Or, crank up the heat by leaving in a few jalapeño pepper seeds.

Produce Moms Tip: Wear rubber gloves when chopping hot peppers so the heat is not transferred onto your skin.

Garnish this soup with a dollop of sour cream and then add either fresh cilantro, basil, or Italian parsley. Then sprinkle with a few small cubes of apple.

  • 4 SweeTango apples halved and cored, skin on
  • 5 average sized sweet potatoes peeled and chopped
  • 1 large onion chopped
  • 2 jalapeño peppers chopped, seeds removed
  • 2 tbsp butter
  • salt and pepper to taste

Instructions
  1. Bring stock to boil in large heavy saucepan. Add SweeTango apple halves, sweet potatoes, onion, peppers and butter. Reduce heat; simmer, covered, until apples and sweet potatoes are very soft, about 25 to 30 minutes. Turn off heat to cool slightly.
  2. In batches, purée the contents of the saucepan in a food processor or blender until smooth. Return soup to saucepan. Add salt and pepper to taste. Serve hot. Makes 8 servings.
  3. Enjoy the soup for its pure deliciousness, or top with a dollop of sour cream, fresh cilantro or cubed SweeTango apples.
Recipe Notes

*To make this soup vegetarian, sub out the chicken stock for vegetable stock.
