Ingredients
Salad
  • 1cup quinoacooked according to package directions
  • 114.5 oz can black beansrinsed and drained
  • 114.5 oz can corn kernelsrinsed and drained
  • 2 avocadosjust ripe – peeled, pitted and diced
  • 1small red onionchopped
  • 1/4cup fresh cilantro or parsleychopped
Dressing
  • 1/4cup olive oil
  • 2tbsp red wine vinegar
  • 4 limesjuice only
  • 1clove garlicmashed into a paste
  • 1tsp salt
  • 1/2tsp pepper
Instructions
  1. Combine all dressing ingredients in a lidded glass jar. Cover and shake well to combine.
  2. Combine all salad ingredients in a large serving bowl. Fold gently to combine. Add dressing and fold again, being careful not to break up the avocado, to combine. Cover and refrigerate for at least 1 hour and up to 4 before serving.
