Elote Salad or Mexican Street Corn Salad

  • 6ears cornhusks and silk removed
  • 1tbsp mayonnaise
  • 2tbsp butter
  • 1 jalapenoseeded and finely chopped
  • 1/4 red bell pepperseeded and finely diced
  • 1/2small red onionfinely diced
  • 1 limejuice only
  • 1/4cup cilantrochopped
  • 1/2tsp chili powder
  • 1/4tsp smoked paprika
  • cojita cheeseto taste
  1. On a grill or in a grill pan, prepare the corn elote-style: Coat corn cobs with butter and mayo and grill. Rotate frequently and cook until all sides are golden brown. Remove from grill plan. Remove corn kernels from cob.
  2. Toss the corn kernels and remaining ingredients together in a large bowl. Top with cojita cheese and serve.
